Course description

Vegetarian Cookery: This course will guide to produce a variety of delicious vegetarian dishes suitable for starters and main course. You will gain confidence in vegetarian preparation and cooking. You will increase your list of mouth-watering dishes which you are prepare outside the teaching kitchen for friends and family, to entertain or create your own business. You will learn to make a selection of vegetarian dishes using variety a preparation techniques. The course will cover different methods of cooking, and will include poaching, grilling, sauteing, and baking. You will learn about the oven temperatures and timing when baking and cooking to get the best results. You will learn decorating and presentation skills suitable for your dishes. You will learn a variety of authentic international flavours whilst preparing your vegetarian dishes. You will learn some basic hygiene and health and safety principles. You will need to purchase the ingredients for each session (except the first session) and bring an apron, tea towel and container/s to take the food home. For some of the dishes you may need to bring appropriate pans or dishes in which to cook them, as advised by the tutor. You do not have to bring anything to the first class. There will be a demonstration by the tutor and a tasting session. If you wish to make notes, you could bring a notepad and pen. You will be advised on what to bring to class at least a week before, for the duration of the course. To get the best from the course, a good attendance is recommended, so you do not miss any teaching.

Additional entry requirements

This course is for anyone with an interest in learning or improving their skills in vegetarian cookery and is suitable for beginners to intermediate level. You will need to be able to follow the recipe sheets in class. You will have an individual learning plan to record your progress and the tutor will give you a feedback on your progress. You will be taught by clear demonstrations in the group and one to one teaching, to ensure your success.

Started career as cartoonist Eagle Girl Robin and drawing live telling stories BBC/ITV childrens progs. before becoming music entertainment staff producer. So it was with trepidation started once more with Life classes at RACC.very rusty seeing all the faults. however tutor is marvellous very accomodating allowing freedom introducing different approaches showing various artist's style etc. and easy with everyone giving simple help and advice. Continuing and also going to try the Portraiture class. Richmond College is excellent.
