This course will develop your basic butchery skills and improve your individual knowledge within the whole carcass of the product. You will be taught the art of whole pig butchery, then attempt your own whole pig for ready for portion break down. This will then turn into a curing and product making session where all products are available to take away. Products such as chorizo and black pudding will be part of the learning experience. This course is for anyone of the age 18 years and above who has an interest in practical butchery, and wishes to learn the master skills of pig dissection and pork production. You will receive a Local Certificate of Participation endorsed by Newcastle College and Warren Butterworth's Butchers.
Clients must have or purchase a Butchers Apron, Due to food safety requirements during practical sessions all clients must remove all visible jewelry, including facial piercing and keep nails short and polish free, Wear professional dress for practical sessions, Have full dexterity and have a good standard of personal hygiene and To be able to stand for long periods of time (support arrangements can be put in place if required). Be able to communicate and work effectively with others
