Course description

Level 3 Diploma in Professional Cookery:

Advance your skills to a high level on this course for people already employed in the hospitality industry. Ideally you should be working in an establishment with high levels of preparation and cooking, using fresh ingredients to create dishes.

Practical lessons on this course cover the following areas: Prepare, cook and finish complex fish dishes; Prepare, cook and finish complex meat and poultry dishes; Prepare, cook and finish complex cold sauces and dressings; Prepare, cook and finish complex vegetable dishes; Prepare, cook and finish complex soups; Prepare, cook and finish complex hot desserts; Prepare, cook and finish complex cold desserts; Establish and develop positive working relationships in hospitality; Maintain the health, safety and security of the working environment; Maintain food safety when storing, preparing and cooking food; Prepare, cook and finish healthier dishes and Cook and finish complex hot sauces. Successful students will be able to progress to industry employment upon completion of this course.

Additional entry requirements

Due to the broad range of dishes covered in this course, students applying must already be working within the industry to at least an NVQ Level 2 standard. Prospective students will need to have completed NVQ Levels 1 and 2 in Professional Cookery or a City & Guilds equivalent.
