Course description

Good Meals on a Budget:

This course gives you the skills that you need to make hearty family meals and delicious dishes on a budget. Make your household budget go further while cooking good meals for yourself and your family. From one-pot cooking for stews and casseroles to working with fish, family roasts and working with simple ingredients such as eggs. Bring to life everyday ingredients and make your household budget go further while learning to make great tasting dishes. Introduction - A quick review of the course and demonstration of budgeting. Theory - You can always utilise sausages or sausage meat for various types of meals. Cooking - Pasta with spicy tomato sauce, sausage patties for hot sandwiches, roast and cooled sausages for use on pizza, quick pizza dough and finished pizza.

One pot cooking: stews and braises. Theory - How to create a large batch of a meal that can feed a family or be eaten for a few days. Cooking - Chili con carne, beef stew, or beef curry (multiple recipe options using the same more expensive ingredients). Plus we will look at variations such as chili verde, lamb stew or curry, also cooking pilaf rice, Roasting large items. Theory - A roast meal can feed a family easily most nights. Cooking - Roast chicken with gravy, perfectly cooked broccoli, mash potatoes, and Yorkshire puddings.

Fresh Fish: how to prepare it and what to do next. Theory - Sustainable white fish can be cooked and served several different ways. Cooking - Filleting gilt head breem (or other less expensive fish in season) with creamed corn and roast red peppers and sautéed new potatoes. Egg dishes: meals that could be breakfast or eaten during the day. Theory - How can you utilise eggs in several different ways to create a cheap meal. Cooking - frying, boiling, poaching eggs and custard bases for tarts and quiches, also learn how to make short crust pastry for tarts.
