This course covers VRQ units which include: investigating the hospitality and catering industry, food safety, health and safety in catering and hospitality, healthier foods and special diets; cooking units: prepare and cook fruit and vegetables, prepare and cook meat and offal, prepare and cook poultry, prepare and cook fish and shellfish, prepare and cook rice, pasta, grains and egg dishes, prepare and cook desserts and puddings, prepare and cook bakery products etc. It is also available for international participants.
Participants should have completed GCSE A*-C in Maths and English language, VRQ Level 1 Diploma in Introduction to Professional Cookery, NVQ 1 Food Preparation and Cooking or BTEC Level 2 in Hospitality.
