This course is designed for more confident students capable of meeting its challenges. It covers the basic skills required in practical cookery, pastry, larder work and restaurant service. This is delivered through practical and theory sessions. In the first year, you should complete the following qualifications; • VRQ Level 1 Diploma in Professional Cookery • VRQ Level 1 Certificate in Food and Drink Service • Level 2 Award in Food Safety • Functional Skills in English, Maths and ICT, or GCSE Maths or English dependant on entry results. To automatically progress to the second year of VRQ programme, you will to need to successfully complete all the qualifications in this programme (including a Merit in the Diploma for Professional Cookery). A good attendance and behaviour record are also essential for progression. Alternatively, you may wish to continue your training in the workplace through the Apprenticeship programme. In the second year, you should continue to develop your skills from the first year, together with additional pastry skills. • VRQ Level 2 Diploma in Professional Cookery • ABC Level 2 Certificate for Pastry Chefs • Functional Skills in English, Maths and ICT, or GCSE Maths or English dependent on entry results.
