In this course students will learn how to prepare, cook and present to a high standard, a wide range of hot and cold pastry items and complex fermented dough products. They will teach them how to produce marzipan sweets and petite fours and which are the best techniques to use when working with sugar and chocolate.
Students must have any one of the following: four to five GCSEs at grades A-C (including English and maths), an intermediate GNVQ in a related subject, a BTEC first diploma in a related subject, an NVQ Level 2 or technical certificate in a related subject, successful completion of an apprenticeship course, successful completion of the Gateway or Newstart course or equivalent qualifications.
