The aim of the course is to extend the patisserie skills already achieved from a level 2 qualification. It is delivered by a Masterchef of Great Britain and has an above national average success rate.
The course is designed to cover all core and specialist units. These include:
Core Units :
* Supervisory skills
* Food safety supervisory
* Practical gastronomy
Specialist Units :
* Fermented doughs
* Petit fours
* Paste products
* Hot, cold and frozen desserts
* Biscuits, cakes and sponges
* Display pieces
* Decorative items
Very broadly the course will cover:
* Decorated gataeux and tortens
* Petit fours: sec and glace
* Speciality doughs: danish, croissants, stollen, wheatsheaf, brioche etc
* Sugarwork: pulled, poured, spun, blown, piped etc
* Chocolate moulding and confectionery items
* Modern concept plated sweets
* Pastillage: flower caskets, woodgrain effects
* Modern gellatine sweets: chartreuse, mousses, charlottes, tortes
* Speciality pastes: sable, strudel, dobos, jaconde, dacquoise etc
Will I Require A Uniform Or Specialist Equipment?
You will need the appropriate uniform and equipment before you start the course. If you are enrolling On-line, a list will be sent to you after you have enrolled.
It is anticipated that most students wishing to join this course will have achieved City & Guilds 706/2 OR City & Guilds 711 OR GNVQ Diploma OR NVQ level 2 in food preparation OR bakery NVQ 2. Each application will be treated on its own merits and in some circumstances entry may be solely on past working experience.
