In this course students will develop their specialist practical skills including advanced cookery of meat, fish, vegetables, sauces, soups, shellfish, buffet items or pastry, dough and hot and cold sweets and working with marzipan, sugar and chocolate. It also includes maintaining a cleaning programme, healthy eating, managing the practical area, stock control and health and safety.
An NVQ Level 2 or Catering and Hospitality Diploma VRQ Level 2 in Catering with a satisfactory reference and equivalent English and preferably maths OR VRQ Level 2 Diploma in Catering with a satisfactory reference and equivalent English and preferably maths OR A relevant equivalent Level 2 qualification with equivalent English and preferably maths OR appropriate industry experience. Entry is subject to a successful interview and tutor reference. You will need to buy a uniform and equipment and be able to attend flexible hours on a rota basis.
