This course is aimed at people working in the industry. The course is practical and involves being assessed in our kitchens as well as having some assessments held in the workplace. You will add to the knowledge and skills you have already have gained since beginning your journey within an exciting industry. The subjects taught and assessed are: Maintaining a safe, hygienic and secure working environment and ensuring that food is safe when storing, preparing and cooking it Effective teamwork, Preparing vegetables, Preparing and finish salad and fruit dishes, Preparing pasta and rice, Preparing and cooking meat and poultry. Learners will need to provide their own chef whites and knives for this course.
You will need a minimum of a GCSE grade D or above. You will also be required to achieve E3 or above in the college basic skills assessments in Numeracy and Literacy.

we are now eight weeks into this course and the college have failed to provide a teacher for the 4 hour practicals so a lab technician with pigeon english is taking it instead.but that is only part of our problems....more
