This intensive 3 day course will ensure that you raise your dinner parties to a new level.
It is the perfect skill-based course for foodies who love to entertain, but find themselves short on ideas, practical skills or time. Our experienced team of chefs and teachers will help you to master the basics and turn them into sophisticated, contemporary dinner party dishes.
Working with fresh and seasonal produce, the techniques covered include simple butchery and fish preparation, bread and pasta making, meringue, cakes and the use of gelatine. This crash course focuses on the most coveted skills, quickly boosting your confidence, and helping you to plan and prepare ahead. You will soon build up a portfolio of delicious, bespoke menus by adapting the recipes to the changing seasons and personal taste, impressing friends and family alike.
Sample recipes: Tamarind spiced quail; Home-made pappardelle with Dolcelatte and walnuts; Pan fried mackerel with fennel and tomato salsa; Cornish crab soup with buttermilk bread rolls; Almond cake with instant berry ice cream and crystallized mint; Sparkling Champagne and strawberry jellies with rose petal cream.
Day 1: 9.45am Registration, coffee and pastries.
AM: Demonstration
PM: Cooking
Day 2: Cooking all day
Day 3: Cook a 3 course lunch and serve with wine in the dining room. The course will end after a late lunch.
