This course is for participants who wish to gain an understanding of principles and practice of catering operations. It covers modules that include understanding types of catering operations, hotel catering policies and organization, catering markets and events, marketing catering activities and services, improving and maintaining client relations, working with other hotel departments and functions, meal functions and menu planning, beverage functions and planning, function room selection and set-up, production and service planning and other guest services.
