This course is designed to develop students catering craft skills whilst working as part of a team. This will include preparing and also serving food. As well as developing the ability to work under pressure as required in the industry. Although practical work will feature strongly this is supported by theory and underpinning knowledge for each of the units identified below. It covers maintain a safe and secure working environment, create and maintain working relationships, clean food production areas, maintain and promote hygiene in food storage, preparation and cooking, prepare and cook meat, poultry and fish dishes, hot and cold sauces, soups, salads and vegetables.
Students must be aged 16 to 18 years old.
